This shows the plans, so you may be able to get a sense of what we are trying to accomplish. The space is approximately 19 X 23 feet. Nice round numbers. Better than square numbers. To the right inside the front door is the grain store, then the dough room, where all the dough will be prepared, and the loaves shaped and proofed. At the back on the right is a little kitchen area for preparing pizza toppings, etc. Straight ahead as you walk in the front door there will be a bar-height counter to sit at while you watch your pizza go in to the oven, or where you can pick up your bread. Behind that are the sinks for hand and dishwashing, more counter space, and at the very back – the oven! The body of the oven will stick out the back of the building and have a roof over it and the firewood pile.
